Chef Bill started his dream from a young age,he went to culinary school learning cooking skills including how to deal with different materials, from raw to luxury, from cutting, making sauce, plating to cooking.
When he was exposed to japanese cuisine, he knew that his longlife desire was to become a top chef in japanese culinary. He decided to go to japan, spent 3 years with a few celebrity chefs, learning different skills, and learned all the valuable techniques of kaseki style. After he moved to the United state, he started working in Sushi Samba, Nobu, Ogawa and Cagen. He met different guests and learned about the tastes of different regions.
Now he wants to continually chase his dream with his own setup. Taki will present all the skills and techniques of 15 years.
